Credit: WISHHThe American Soybean Association’s World Initiative for Soy in Human Health (ASA/WISHH) program brought participants from Ghana, Kenya, Uganda, Nigeria and Senegal to the U.S. last week for a program titled “Applications of Soy Proteins in Meat Extension, Meat Replacement and Structuring Technologies for Enhanced Carcass Utilization in the Meat Industry.”The activity was funded by the USDA’s Global Broad Based Initiative (GBI), Market Access Program (MAP) and the Cochran Fellowship Program. This week, the team visited with Tom Mertle and other staff at DuPont Nutrition & Health. While at DuPont, the team learned about the wide variety of products they offer and how to use them in meat and other food applications. On Tuesday, the team traveled to Illinois to visit Jerry Gaffner’s farm.
